Every Thursday we will be holding an introductory butchery lesson for those that wish to get to grips
with the in's and out's of being a 'd-lo rech-tub' (butcher back slang for 'old butcher'). There you
go, the lesson has already begun and no charge.
The lesson will last for
an hour and a half and comprises of the following.
- Basic knife selection and maintenance
for meat cutting knives.
- Block safety and maintenance and advice on selecting a surface to cut
on at home.
- Introduction to poultry anatomy and cutting with student participation
- Introduction lamb, pork and beef anatomy and cutting with student participation
- Each
student will take home all of the products they produce.
Each session
is limited to three students
Cost is £100 (inc VAT) reduced from £120 (for a limited
period).
If you book as a group these sessions can be tailored to meet your needs.
Alternatives available are a sausage making course or a more indepth look at a specific speices.
Can be arranged on consecutive weeks.
